The hillside of Les Corves is famous for its red marl soils and evening sun, which give Trousseau both ripeness and freshness. Here, Domaine Ratte works with Trousseau la Dame, an old local variety that produces very few grapes but with very concentrated aromas and tannins. The grapes are destemmed already in the vineyard, fermentation starts gently
